Without fear of exaggeration, we can say that Indian cuisine is full of contrasts. The main principle here is that the dishes served in India often vary in colour, texture and taste. For example, if a meat has a lot of sauce, it is usually served with a 'dry' vegetable, which has no sauce. If the vegetable served is very soft, for example, spinach, then there is a crunchy taste all around the table. But overall, despite this diversity in color, texture and flavor, Indian cuisine is generally low-fat and often spicy.

Typically, a typical Indian meal consists of a vegetable dish, a meat, bread and/or rice, a lentil dish, a plain yogurt (or yogurt relish), and a fresh chutney or small, flavored salad. You can add some pickles and preserved chutneys if you have them. Fruits are served instead of sweets at the end of the meal, although on festive occasions sweets would not be bad at all. Sometimes, when the meat dish is particularly elegant and rich, usually no lentils are served, but an equally elegant casserole rice. As far as vegetarians are concerned (there are a lot of these in India), they like to increase the number of vegetable and lentil dishes and always eat some curd in this or that form.

As far as the way of eating the food is concerned, most of the Indians prefer to nourish themselves with their hands. Although the right hand is used for eating, the left hand is considered 'impure'. With the right hand, Indians break pieces of bread and then use the pieces to scoop out some meat or vegetable. Along with this, they also make clean morsels from rice and other dishes and then take them in their mouths. Needless to say that hands must be washed before and after eating food. Even roadside stalls will have a pot of water (that water pot) to wash first. However, there are more Western Indians who may use knives and forks or spoons and forks, or just forks.

When Indians serve themselves, they place most of the food items on their plates next to each other. Only very wet, runny dishes are sometimes loaded with rice but not all over rice. Some rice is left plain to be mixed with other dishes while eating.
